Mixed Mushroom Risotto

  • 300 grams mixed mushrooms
  • 100 grams tablespoons butter, softened but not melted
  • 800 grams fresh wild mushroom mix of your choice such as chanterelle, shitake, large mushrooms, oyster, crimini, roughly chopped
  • 8 cups chicken broth, homemade always better!
  • 15 mls  extra-virgin olive oil
  • 180 grams arborio rice (8 to 9 ounces)
  • 240 mls cup good, dry white wine
  • 200 mls cup dry white vermouth
  • 200 cup grated Parmesan cheese + additional for serving (optional)
  • Fresh parsley, rough chopped
